Brrrr, it's so cold it's ridiculous! We don't have snow, ice or any of that wet stuff but it's cold nonetheless. It's so cold I saw a democrat with his hands in his own pockets! Heh...
Speaking of cold, I'm taking part in a clean out the freezer challenge so this week's menu is based on what's in that freezer, just screaming to get out so new stuff can come in. I also got a new Aroma electric wok and want to use it.
Sunday night we had roasted chicken with green beans, carrots, potatoes, and onions that were cooked in the new wok.
The rest of the week we'll have, in no particular order:
Chicken and vegetable soup with the leftover chicken and vegetables
Turkey sausage and beef meatballs in "gravy" (a light broth based sauce) served with salad and steamed spinach
Meat crust pizza topped with turkey bacon, smoked turkey, and turkey pastrami
Seasoned baked salmon with caramelized onions, served with salad and steamed broccoli
Chili Relleno Casserole with ugly green bean fries
YOYO (You're On Your Own) when we clean out the fridge of leftovers, snack on something light, have a couple of hotdogs, or whatever
And that's it for this week's hearty, healthy, and very frugal menu. :)
