Menu Plan Monday

This week my work schedule is a little hectic and we're limiting eating dinner out so I did some cooking in preparation for the week. Between cooking ahead a few things and good old fashioned menu planning, meals this week shouldn't be a problem. If you haven't participated in Laura's Menu Plan Monday yet, now might be the time to get started. This week she's giving away a nice little gift to some lucky participant so jump on in!

I made Slow Cooker Roast and Gravy and My Way Wings. Both are very easy, thrifty, and tasty dishes and neither take much time. Leftover steak and gravy is easily turned into a savory meat pie so boredom with the dish isn't an issue. Although we usually eat the roast and gravy with plenty of vegetables or a salad, I just ate mine from a bowl tonight and it was scrumptious!

To make the roast and gravy, I put about 5 lbs of chuck roast, cut into serving size slabs, in the slow cooker and cook on low for several hours until tender. Once they're tender I drain most of the liquid and add 3 or 4 chopped onions, stalks and all, a can of cream of mushroom soup, a can of cream of celery soup (other creams ofs work, too..be brave!) and a goodly amount of garlic pepper seasoning and a little celery salt. Then I just let it all cook on low for another hour or so and voila, steak and gravy! Slow cooking is a grand way to turn inexpensive and tough cuts of meat into tender dishes and my slow cookers and I are great friends.

So, here's the menu for this week, in no particular order except for the first meal which we had tonight:

Slow Cooker Roast and Gravy with leftover carrots and potatoes cooked with roast last week

My Way Wings served with tossed salad and sweet fries

Crustless Beef Pie made with the roast, gravy and vegetable leftovers served with green beans and salad (will post the recipe the night I make this)

Pasta Del Sol made with Dreamfield's pasta and a few modifications to make it lower in carbs served with steamed mixed vegetables and mock creme brulee for dessert

Leftover My Way Wings with steamed spinach

Teriyaki Chicken Thighs with wild rice and steamed yellow squash

You're On Your Own (YOYO) night when we finish up the leftovers so I can clean the fridge for a new week
