It's time for Menu Plan Monday again! Continued thanks to Laura for hosting this fun and helpful weekly event and to Erin at $5 Dinners for guest hosting this week.
For those of you who haven't given menu planning a try, what's holding you back? Planning meals isn't nearly as hard as it might seem and can save a lot of time, stress, and money. Check out the Menu Plan Monday entries and add your own to the list so we can see what you're making for dinner this week.
Since we've been sick for over a week and haven't eaten or cooked much, our menu for the coming week is very similar to the last one I posted. Hopefully the next MPM I participate in will find me feeling more chipper and more inclined to try some new recipes. In the meantime, we're eating healthy, lower carb meals.
Tonight DH wanted a Schlotzky's sandwich so he had one of those and brought me a nice grilled chicken caesar salad. I didn't think I could eat it all but I did. I was hungrier than I thought!
The rest of the week we'll have, in no particular order:
Teriyaki chicken and vegetables, broccoli slaw, and a lovely low carb dessert made with mascarpone and chocolate shavings
Baked perch, salad, and steamed spinach
Cheese Pancakes with beef brats
Hamburger steaks with sauteed onions and mushrooms, steamed zucchini and yellow squash, and green beans
Cheese enchilada stack made with low carb tortillas and plenty of cheese
Dinner out one night
There you go, 6 evening meals at my house. None of them are exciting but they're filling, low in carbs, and thrifty and those are all good things!

I also like to do a meal plan for every week. After meal planning I have a list of all of the groceries that I will need for the week and I get it all n the one day.
