September 11th - September 17th Menu


Wow, last week just sped by! Between work and other stuff, it seems like I just got back from vacation yesterday. I'm stressing a bit over the move of my mother and stepfather and his increasing dementia. I'm afraid that soon, very soon, he's simply going to be too much for Mom to handle alone. I'm not sure just what we'll do when that happens. Our options are very limited.

And this coming week is going to be a busy one, also, so more light cooking and eating are in my future.

Last night I went to Carl's Jr. for a Portobello Mushroom burger in a lettuce wrap. No, it's not as tasty as the burger with the bun and fries but it's much lower in carbs and much easier on the blood sugar. It was good and really hit the spot.

Tonight I'll have Tilapia and vegetables steamed in paper and with it a salad and a bit of wild rice

The rest of the week I'll have, in no particular order:

Homemade Ricotta Gnocchi with marinara sauce and steamed spinach. Gnocchi is something I very recently learned to make along with some other pastas and I'll probably never buy pasta again!

Slow cooked vegetable soup with a homemade wheat roll

Chicken and vegetable stir fry

Beef fajitas with plenty of freshly made tomatillo salsa

Leftover night when I finish off whatever is in the fridge

I'm still working on reproducing dishes I've eaten in restaurants recently but other than the tomatilla salsa, I haven't gotten them right. I will at some point and when I do, I'll share them with y'all.

Wish we had a Carl's Jr. around here. That sounds like a great alternative option to the typical fast food. I love portabello burgers!

I love Carl's Jr but don't go there often. When I do I get a burger in a lettuce wrap and it's usually the Portobello Mushroom burger. It's actually healthy compared to most fast food places so even though it's more expensive I'll buy it. Cause I'm worth it. ;)
