Last night we had our Super Sunday Mini feast, which was very good but contained way too many carbs to have often and we're back on track today.
In light of that, here's the healthy menu for this coming week, in no particular order:
Baked whiting, steamed green beans, and tossed salad
Chicken salad roll ups with slightly modified slow cooked caramelized onions and baked cabbage
Leftover roast beef cut into chunks and simmered in low carb gravy, served over wild rice with tossed salad and steamed green beans
The menu isn't exciting but it's thrifty and all dishes are very easy to make. In addition, it makes very limited use of processed and packaged foods, which is a real plus in my book!
