I hate when that happens!

We got to church last night and realized that it was the night of the church Thanksgiving dinner. Ooops! We both thought it was next week so we hadn't brought a thing. I hate when that happens! The preacher and his wife insisted it was no big deal but we walked to the Hispanic market next door and bought some incredibly large and tasty cookies that pleased the whole crowd. Whew! The food at the dinner was good and the fellowship was great.

Then today at work, one of our better employees called in to say he quit..about two hours before he was due to start his shift, not even giving us notice. To cover part of the gap that his absence caused, I stayed an extra hour at work. I hate when that happens! But I really am sad to see the young man go. He was very good at his job and I'll miss him.

This week, my planned menus haven't worked out at all. Something interferes with the plans and we end up eating whatever we can find or picking up something while we're out. Bad habit, bad habit!! I hate when that happens! So I was determined to cook tonight and I succeeded. We had Easy Cheese Steak Roll Ups but rather than use onions and chopped garlic, I threw in about 2 teaspoons of homemade onion soup mix. I also used a combination of shredded sharp cheddar, asiago, and mozzarella cheeses. The asiago gave the meat a little zing it doesn't normally have and we liked it a lot. There's enough left for us both to have a roll up for lunch tomorrow, too.

Tomorrow night's dinner is Slow Cooked Steak and Gravy with wild rice and green beans. I'll put the rest of the top sirloin in the slow cooker with some cream of whatever soup and some chopped onions and set it on low. When I get home all I have to do is make the rice and heat the green beans and voila, dinner is served! And I don't hate it when that happens!

Hi,
I hate when that happens too. All this week we have gotten up at 3 a.m. to deliver papers. Yesterday we had a lady call in also. She didn't quit but I had to stay until 4 and I had been there since 6 a.m. It sucked so bad. I am glad that your thanksgiving dinner at church was a good turnout. My Baby calls that a "eatin' Meetin'". LOL!! He was raised Baptist. So I better get off of here and go to work. Talk to you later. Sorry about the email. Roxi

Well that worked out getting those cookies. I've found that it helps to have a few freezer meals for those nights when something happens and I can't cook what I have planned. Usually I have some spaghetti sauce in the freezer or I make two lasagna's instead of just one and stick the other in the freezer or something like that. Give that a try if you haven't already.

Manuela, I normally have plenty of things in the freezer to make quick meals but this week I just haven't had much time for it. Between not feeling good and work, I've not had much motivation but I'll get back on track. Thanks for the reminder. :)
