A cheesy lunch

easy,thrifty low carb

This is part of today's lunch. Mmmmm, cheesy meat loaf! Unfortunately, you can't really see the cheese since it deliciously melted but the meat loaf was great. It was also easy and quick, taking about 25 minutes from beginning to end. And no, that isn't a fly on the meat loaf-its a grill mark on a bit of onion!

I just added a handful of shredded sharp cheddar cheese, two raw eggs, some chopped grilled onion, and some Montreal Steak Seasoning to a pound of lean ground beef, mixed it well, and baked it in a shallow pan at 350 degrees. When it was almost finished I put a little ketchup on it and baked it about 5 more minutes.

Without bread or cracker crumbs it was lower in carbs than most meat loaf and served with steamed zucchini it was filling and thrifty! And then I ate some more for dinner and still have some left for tomorrow. Gotta love that!

I love meatloaf w/out breadcrumbs in it. I make the Paula Dean's bacon cheeseburger meatloaf and it's such a huge hit around here!

Yep, crumbs aren't necessary if you use the right ingredients. My sister likes Paula's meat loaf too but I haven't tried it. Yet.

Your meatloaf looks tasty! Love meatloaf the next day! Cold on good bread with a little mayo salt & pepper! As a sandwich.
